Perfect Tea Pairings

Mother's Day is just around the corner and while our gracious moms usually answer "I don't want anything", we all know that delivering nothing is a big no-go. 

Growing in popularity more and more every year, Traditional Afternoon or High Tea services are usually a great gift for mom. But with prices anywhere from 50-75 dollars a head, it can get expensive real fast.  Why not show mama just how much you care by planning her own personal tea service at home! 

With the help from THAC Tea Sommelier Samantha Payne, we've paired up 6 teas with some amazing goodies from Springridge Farm including scone mix and the 'Mother's Day' Marmalade that is made with local Niagara peaches,  oranges and a splash of champagne. 

These pairings are sure to get mom excited for her day and make her truly feel like a Queen.

The "Traditional" Mom -  Mama knows what she likes 

- Ceylon Black Tea (Personal favourite from DAVIDsTEA): Nothing beats a good, rich cup of black tea, especially from Sri Lanka. Better known as an "Orange Pekoe", if your mom is a fan of black teas, this is definitely a treat. Served with or without milk (I'm a purist so none for me), bold flavours mix really well with the sweet peach flavours of the 'Mother's Day Marmalade' and work perfectly for your breakfast or afternoon tea service for mama.

- Cream of Earl Grey ( Personal favourite from Monarch Tea Co) - Nothing beats this classic.  When you find the PERFECT Cream of Earl Grey blend, you're in absolute heaven. The Vanilla and natural citrus flavours of bergamot pair really nicely with the sweetness of the peach and apricot in the marmalade. Want to go EXTRA special for mom? Turn it into a tea latte with hot steamed milk and a little agave nectar and your work is done. 

The "Adventurous" Mom - Step out of the comfort zone and find a new tea she'll fall in love with. 

-Milk Oolong (Personal favourite from Genuine Tea): Most people tend to not know a whole lot about Oolong tea. And if you are one of them, I'll make it quite simple for you. It's a beautiful complex tea that can taste different depending how it has been prepared. A 'short oxidized' tea is very reminiscent of green teas and may intrigue those looking to branch off in a new direction. A 'long oxidized' oolong is bold, malty and has hints of plum and baked stone fruit.  Milk Oolong comes in closer to the 'short oxidized' side. Just a straight leaf tea, it has natural creamy/buttery flavours from the regions it is grown in and will add a savoury taste to your scones on their own. 

- Almond-Caramel Tea Blend (Personal favourite is Creamy Nut Oolong from Citizen Tea) : Who says you can't have a "treat" and still behave. Treat mom to something a little more desert-y while she enjoys her spread of scones and marmalade. The mix of the almond and caramel's savoury flavours compliment the sweet fruit flavours, and make the scones themselves more savoury as well. Mom won't even believe that tea can taste like this! 

The "Cool" Mom - Don't make mom choose between tea and cocktails 

- Lavender Lemonade Tea Mimosa (Personal Favourite is French Lavender from Lemon Lily)  : A refreshing take on a traditional brunch favourite and in my opinion, Lavender goes with nearly everything! Floral meets fruity and this pairing is exquisite! And with a small hint of natural mint it is a perfect compliment to the marmalade. 

Recipe

1 1/2 tbsp dried lavender

2 Cups boiling water

1 tbsp agave

Champagne or Prosecco

Instructions

Steep the lavender in a teapot with the boiling water for 5-6 minutes. Add the agave to sweeten, and stir well until completely mixed in.

Add a few ice cubes into each champagne flute, then add an equal mixture of champagne, lavender tea and lemonade. Add more according to personal taste.

-  Chai Hot Toddy ​(Personal Favourite is Audrey's Chai from Audrey's Tea Room) : Spice up mama's morning with another traditional favourite. Whether we have cool or warm weather on Mother's Day, that shouldn't stop you from trying this one out. The warm spices in the Black Chai blend with a hint of citrus, and a splash of bourbon compliments the notes of the marmalade so well, you will wonder why you have never had this combination before. 

Recipe 

1 bag black chai tea

1 Cup of hot water

1 tbsp. honey

1 tbsp. fresh lemon juice

2 oz. bourbon

Lemon wedge

Instructions

Pour the hot water over the tea. Add agave nectar or honey and let it steep for 3 to 4 minutes.  Add lemon juice and bourbon and stir. Garnish with the lemon wedge to be extra fancy.
